Mac Stir Fry

​This family favorite is delicious, quick to make, and you can use whatever you like. So get out all your little bowls to prep and have some Mac Stir Fry for dinner!

Ingredients

• 1 Tbs olive oil
• 1 onion, cut into strips
• 2 tsp minced garlic
• 4 carrots, cleaned and sliced on the bias
• 2-3 stalks celery, cleaned and sliced ½ inch thick
• 1 c zucchini, halved and sliced
• 1 c yellow squash, halved and sliced
• 1 bell pepper, cleaned and cut into strips
• 1-2 c broccoli, cut up
• 1 c sliced mushrooms
• 1 lb cooked chicken, cut up (you can use 1 block of firm tofu instead or make this as all vegetables)
• Soy Vay Veri Veri Teriyaki
• Cooked rice, any kind - 1 cup per person

Other add-in ideas:

• ½ c sugar snap peas
• 1 can water chestnuts, drained - add at the same time as mushrooms
• Green onions

Directions

• Clean and prep all vegetables
• Start preparing the rice so it’s all ready at the same time
• Heat olive oil in a large skillet
• Cook carrots in the microwave or steamer for 2 minutes
• Add onions and garlic to skillet, cook 2-4 minutes
• Add carrots and celery, stir and cook 3-5 minutes
• Add zucchini, squash, peppers, cook 2-3 minutes
• Add broccoli and mushrooms, cook and stir until all veggies are tender but slightly crisp
• Add cooked chicken if desired, stir and cook to heat
• Add 2 Tbs Soy Vay sauce, toss to coat
• Serve over rice with Soy Vay
