Stewed Tomato Soup

​Stewed Tomato Soup, just a few simple ingredients but so much flavor! Enjoy with your favorite crusty bread or a grilled cheese sandwich

Ingredients

• 1 quart stewed tomatoes (or two 15-oz cans of whole tomatoes)
• 1 small onion, minced
• ½ c celery, minced
• 2 Tbs butter or margarine
• ⅓ c flour
• 1 ⅓ c milk, any kind
• ½ tsp salt
• ¼ tsp pepper
• 1 tsp dried parsley
• 1 Tbs tomato paste
• Heavy bottomed 3-4 quart pan

Directions

• Sauté onion and celery in butter or margarine until soft
• In a small bowl, stir flour to lighten it and add just enough milk to make a smooth paste. Then add salt, pepper, and the rest of the milk, whisk well. Set aside
• Pour tomatoes into a bowl and break them up into small pieces with a potato masher or fork
• Add tomatoes to the celery and onions and bring to a boil. Turn down and simmer for 30 minutes, stirring every 5 minutes or so
• Add tomato paste and mix well
• Slowly stir in the milk mixture, mix well. Continue to stir as it thickens
• Add parsley and simmer for 15 more minutes
• Taste and add more salt and pepper if needed. If it's a bit sour or acidic, you can add 1 tsp sugar if desired
• Serve with a nice grilled cheese sandwich
