If you know anything about the Macs, you know that we love breakfast food. Instead of Christmas dinner, we have a big brunch on Christmas morning! We do have sausage gravy & biscuits and scrambled eggs too, but one of our absolute favorite brunch dishes is this French Toast Casserole we learned from our cousin Vicky years ago. It can be made in advance and freezes well too! Serve with your favorite french toast toppings, or it's even delicious plain!

Time for breakfast! Since we just added syrup from Paul Family Farms to our online store, there's no better way to celebrate than by making pancakes! This recipe is an oldie but goodie, as evidenced by the heavily used recipe card (the Mac kids made this recipe a LOT). The recipe is doubled in the photos (we like large pancakes in this family) but you can make them whatever size you would like to, and the recipe doubles/triples easily. So what are you waiting for?
