Hummingbird Cake

The Hummingbird Cake is a spice cake with a tropical flair. The original recipe was called the Doctor Bird Cake and came from Jamaica but the Americanized version came through Southern Living Magazine. You have to make it once in your life!

A couple of things which are very important no matter which version of the cake you make: the bananas should be ripe but not over ripe and diced so that the pieces will be suspended in the cake. And do not drain the pineapple!

Dream Cake

The Dream Cake is my favorite childhood cake! My mom's combination of Pistachio Pudding Frosting in the middle and Chocolate Pudding Frosting on the outside is strangely delicious, the cake is light and tender, and the frosting is creamy but not too sweet. Try it for your next gathering, it's soooo good!
