Fun with Rhubarb

​Fun With Rhubarb! During the Quarentimes we all had to get creative to avoid losing our marbles. My Rhubarb came up like a forest of rhubarb stalks! So after making the usual things I started looking for something else to do with it and this episode of In The Kitchen With Mary Mac gives you those rhubarb gems! Enjoy!

*the rhubarb fizz recipe is from Martha Stewart, Mary Mac has not tested that one because it's gin

Rhubarb Simple Syrup

Ingredients

  • 2 lbs rhubarb (8-10 stalks)
  • 4 cups of water
  • 1 ¾ to 2 cups of sugar

Directions

  • Trim rhubarb (cut off about two inches at bottom then just below the leaf at the top
  • Wash your rhubarb, make sure it's clean and there's no bad spots on it, and cut it up into 1 inch pieces
  • Put rhubarb, water, and sugar in a heavy bottom pot and bring it to a boil, stirring to dissolve the sugar
  • Once you get it to a boil, turn it down to medium heat and let simmer about 60 minutes uncovered. Stir occasionally to make sure the sugar is dissolving and that you're breaking up the rhubarb
  • Place a large sieve over a bowl. Let the rhubarb mixture cool a little bit, then very carefully pour it a little bit at a time through the sieve
  • Pour the drained liquid through either a jelly bag or a cheesecloth-lined colander into another bowl to make sure it’s as filtered as possible. Don’t squeeze or press on it, just let it sit and drain
  • Put the rhubarb bits that you’ve filtered out into a container in the fridge to use in a Rhubarb Fool
  • Let the rhubarb syrup cool, then pour into a glass bottle or jar and store in the fridge until ready to use

Variation: Rhubarb Shrub

  • Combine cut up rhubarb with 1 c vinegar and 1 c sugar in a pot
  • Cook it until it breaks down, then strain it and store the juice in the refrigerator
  • Mix with seltzer or cold water
  • *You can use pretty much any kind of fruit for this

Rhubarb Fizz

Ingredients

  • 8 oz gin
  • 9 oz rhubarb simple syrup
  • ½ c lemon juice
  • Ice
  • Sparkling wine - any kind you like

Directions

  • Blend gin and rhubarb simple syrup together
  • Add lemon juice and mix well
  • Put ice in 8 glasses and pour the mixture over the ice
  • Top with sparkling wine

​Rhubarb Slice

Ingredients

  • 1 oz vodka
  • 2 oz rhubarb simple syrup
  • 1 very thick slice of orange, peel on
  • Club soda
  • Ice

Directions

  • Put about four ice cubes into a 16-oz glass
  • Add vodka, rhubarb simple syrup, and orange slice to the glass
  • Stir the drink and poke the orange a little bit
  • Top with club soda

Rhubarb Fool

Ingredients

  • 2 lbs rhubarb
  • ½ c water
  • About ¾ c sugar
  • 1 ½ c heavy whipping cream
  • 1 tsp sugar or powdered sugar

Directions

  • Cut up rhubarb (if you made simple syrup earlier, you can add the leftover rhubarb bits to this)
  • Put rhubarb, water, and ¾ c sugar into a pot. Cook it down just like you’re making applesauce
  • Whip together whipping cream and 1 tsp sugar, set in the refrigerator for a couple hours to set up
  • In a pretty wine glass, layer whipped cream and rhubarb alternately until the glass is full
  • Enjoy!
