Buffalo Dips

Memorial Day is just around the corner, and so are summer cookouts, potlucks, and picnics. We gave you a surefire picnic dessert recipe 2 weeks ago, so now here's one of our favorite party appetizer recipes to go with it! You've likely had Buffalo Chicken Dip before, but if you haven't made it we wrote down the instructions for you. Mary Mac also figured out a way to make it vegan using jackfruit, and it's just as delicious!

Buffalo Chicken Dip

Ingredients

• 2 c cooked chicken – 1 large baked chicken breast or 1 rotisserie chicken
  
• 8 oz Neufchâtel cream cheese
• ½ c Frank’s Red Hot or Sweet Baby Ray’s Buffalo Wing Sauce
• ½ c ranch dressing
• Optional: 4 oz shredded cheddar cheese or 4 slices American cheese

Directions

• Chop chicken up into small pieces (measure 2 cups)
  
• Place in a 1-2 quart crockpot or microwave-safe bowl
• Cut up cream cheese and add
• Mix in hot sauce and ranch dressing
• Heat in crockpot on medium or heat in microwave or oven until just hot
• Stir and mix well, add cheese if desired
• Continue heating until ready to serve, stirring often to blend ingredients
• Serve with tortilla chips

Buffalo Jack Dip (vegan)

Ingredients

• 1 package BBQ Jackfruit – I used the Jackfruit Company 10 oz bag of BBQ Jackfruit
  
• 4 oz Tofutti sour cream
• ½ c Frank’s Red Hot or Sweet Baby Ray’s Buffalo Wing Sauce
• ½ vegan ranch dressing
• 4 slices vegan American cheese

Directions

• Pour BBQ Jackfruit into a colander. Rinse, drain, and break up into small pieces by hand
  
• Place in a 1-2 quart crockpot or microwave-safe bowl
• Mix in sour cream, hot sauce, and ranch dressing
• Heat in crockpot on medium or heat in microwave or oven until just hot
• Break up slices of American cheese and stir into hot dip
• Continue heating until ready to serve, stirring often to blend ingredients
• Serve with tortilla chips

Vegan Ranch Dressing

Ingredients

• ¼ c vegan mayonnaise
  
• ¼ c almond milk or other dairy-free milk
• ½ tsp granulated garlic
• ¼ tsp dill weed
• ¼ tsp parsley
• ¼ tsp salt
• ⅛ tsp pepper

Directions

• Mix all ingredients together well
• Makes ½ c vegan ranch dressing
