Chicken Meatballs

​These chicken meatballs are delicious and super easy to make. You can serve them with pasta, in a meatball sandwich, topped with cheese and sauce, or make some awesome Chicken Parm Stuffed Mushrooms! Enjoy!

Ingredients

  • 1 lb ground chicken meat
  • ½ c Italian seasoned breadcrumbs
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • ½ tsp granulated garlic
  • ½ tsp granulated onion
  • 1 tsp minced garlic, jarred or fresh
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 large egg

Directions

  • ​Prepare a rimmed baking sheet by lining it with parchment paper
  • Mix all ingredients well, let rest 5 minutes
  • Form into balls about 1 ½ inch diameter
  • Place meatballs on prepared baking sheet
  • Bake at 350°F for 20 minutes
  • If serving with pasta or in meatball sandwiches, after baking place meatballs into a sauce pot with 1 quart pasta sauce and cook for 30 minutes-1 hour on low
  • Makes about 16 meatballs, this recipe can be doubled

Variations

Dipping Sauces
  • Keep baked meatballs warm in a crockpot or chafer, serve with a variety of dipping sauces
  • Sauce ideas: Sweet Baby Rays buffalo wing sauce or BBQ sauce, ranch dressing, pasta sauce, sweet chili hot sauce, spicy ranch, hot honey, or whatever you like!
​Chicken Parm Meatballs
  • After baking, place ¼ slice of mozzarella or provolone on each meatball and return to oven for 2 minutes
  • Top meatballs with a tablespoon of pasta sauce and bake 3 more minutes. Serve hot
Chicken Parm Stuffed Mushrooms
  • Clean and remove stems from large fresh button mushrooms
  • Prepare a pan with parchment or olive oil
  • Dip mushroom caps in olive oil, coat completely
  • Fill each mushroom cap with meatball mixture
  • Bake 20 minutes at 350°F
  • Remove from oven, top each with ¼ slice of mozzarella or provolone on and return to oven for 2 minutes
  • Top meatballs with a tablespoon of pasta sauce and bake 3 more minutes
  • Serve hot
