Haluski

​It's a new year's tradition to eat cabbage and pork, so here's Mary Mac's recipe for Haluski, a delicious dish that's a perfect side or entree! It's also easy to make it dairy-free by using plant butter, and you can make it vegan by using eggless noodles and leaving out the add-ins. Happy New Year!

Ingredients

• 12-oz bag of egg noodles - regular, yolkless, any kind
• 1 medium head of cabbage
• 1 large onion (or 2 if you really like onions)
• ½ c butter
• Salt
• Pepper
• 1 large skillet, wok, pot, or Dutch oven

Optional add-ins:

• ½ c sour cream
• ½ c crumbled bacon (cooked ahead of time)
• 1 lb sliced kielbasa (cooked ahead of time)
• ¼ c crumbled farmer’s cheese
• ½ to 1 c diced ham (cooked ahead of time)

Directions

• Clean onions, cut in half, and slice into ½ inch wide strips
• In a large skillet, sauté onions in ¼ c butter on medium low
• Remove leaves from cabbage that don’t look good
• Cut cabbage into quarters, remove core, and slice into ½ inch wide stripes about 2-3 inches long
• Add cabbage to the onions, sauté until nicely wilted
• Cook the noodles to al dente, drain and set aside
• When the cabbage is cooked soft, carefully fold in the noodles
• Add more butter to coat the noodles, and add salt and pepper to taste
• If you’re using one of the optional add-ins, mix them in now
• Serve hot
