Sicilian Pizza

Mary Mac has been perfecting her recipe for Sicilian Pizza over the last couple years, and here it is! To make this special pizza extra special, try sprinkling basil and red pepper flakes on the dough. Enjoy!

Makes 1 9x13 (use a metal pan), 1 half sheet, or 2 quarter sheets

Ingredients

  • 1 c thick sauce (2 c if using 2 quarter sheets or 1 half sheet)
  • 4 c grated cheese – mozzarella or provolone, or a combo of those plus Romano
  • Pepperoni – any kind you like that cups
  • 3 c flour
  • 2 packets yeast
  • ½ tsp salt
  • 1 tsp sugar
  • 1 ¼ c warm water
  • Olive oil
  • Additional flour for kneading, about ½ c

Directions

  • Mix 3 c flour, yeast, salt, and sugar in a large bowl
  • Add warm water and 2 Tbs olive oil, mix well
  • Add a little flour at a time and mix until it forms a slightly sticky ball
  • Knead for 4-5 minutes adding as little flour as possible. The dough should be light but slightly sticky
  • Lightly oil the bowl, turn the dough to coat with oil and cover the bowl with cling film
  • Let rise until double, about 1 to 1 ½ hours
  • Punch down dough, knead a few times, then cover again
  • Prep pans by coating well with olive oil
  • Punch down dough again and stretch it to form a rectangle the size of your pan
  • Place dough in pan, stretch it to fit the pan and cover with a towel
  • Let rise until it almost fills the pan, stretching occasionally
  • Preheat oven to 385°F
  • Poke your fingers around in the dough, like focaccia
  • Sprinkle a little cheese on the dough
  • Top with sauce, then cheese, then pepperoni
  • Bake 30 minutes, turning the pan halfway through
  • Remove from pan to a wire rack using a big flipper
  • Don’t cool too long, slide onto a cutting board to cut
