Somali Sambusa

​We first had Sambusa at the Lawrenceville Farmer's Market in Pittsburgh and we instantly fell in love! If you can't find cardamom in your grocery store, you can substitute allspice and it still comes out delicious. We're still tweaking the recipe (Anna got too many egg roll wrappers), so 2023 may end up being the year of fried meat pastries!

Ingredients

• ​1 lb lean ground beef
• 1 large onion, chopped fine
• 5 cloves garlic, minced
• 1 tsp salt
• ½ tsp cumin
• ¼ tsp black pepper
• ¼ tsp ground cardamom
• ¼ tsp ginger
• ¼ tsp turmeric
• ¼ tsp ground cloves
• ¼ tsp cinnamon
• Oil for frying
• 1 package egg roll wrappers

Directions

• In a small bowl, mix salt, cumin, black pepper, cardamom, ginger, turmeric, cloves, and cinnamon
• Sauté beef, onion, and garlic in a skillet until no pink remains and onion is soft
• Drain and transfer to a medium sized bowl
• Add the spices to the meat mixture and mix well
• Fill a bowl with 2 c water for sealing the wrappers
• Cut each wrapper into 2 triangles by cutting diagonally
• Wet the two short edges of one triangle and pinch tightly to form a cone
• Fill cone with 1-2 Tbs of the meat mixture, wet and seal the top edge
• Set on a plate and continue until all the meat is used
• Heat the oil over medium heat in a medium sized skillet, oil should be about 1 inch deep
• Fry sambusas 4 at a time, about 1 minute per side
• Drain on paper towels
• Eat warm and enjoy!
