Three Zucchini Recipes

Zucchini is absolutely taking over our garden, so we're bringing back 3 recipes from the very beginning of "In the Kitchen with Mary Mac." They're super easy to make AND will use up a lot of zucchini, so give them a try and let us know what you think!

​Zucchini Appetizer

Ingredients

  • 4 eggs slightly beaten
  • ½ c oil
  • ½ tsp salt
  • ½ tsp dried basil (if using fresh chopped, use 1 Tbs basil)
  • 2 Tbs dried parsley (if using fresh chopped, use ¼ c parsley)
  • ½ c minced onion
  • 1 ½ c baking mix, like Bisquick
  • ½ c grated Romano cheese
  • 3 c shredded zucchini

Directions

  • Mix all ingredients well
  • Bake in a 9x13 pan at 350°F for 25-35 minutes
  • To serve, cut into 16 squares and serve with marinara sauce

​Zucchini Lasagna

Ingredients

  • 1 ½ to 2 lbs dry ricotta cheese 
  • 1 lb shredded provolone cheese
  • 1 c grated Romano cheese
  • 2 zucchini
  • ¼ tsp granulated garlic
  • ¼ tsp basil
  • 1 dash salt
  • 1 dash pepper
  • 2 eggs

Directions

  • Slice zucchini into long pieces, like lasagna noodles
  • Mix ricotta, provolone, and Romano cheeses well
  • Add garlic, basil, salt, and pepper
  • Add 2 eggs and mix well
  • Grease a casserole dish or coat with olive oil (you can use a disposable foil pan if you like)
  • Layer ingredients in the following order:
    • coat the bottom of the pan with pasta sauce
    • 4-5 strips of zucchini
    • crumble half of the cheese mixture
    • cover with sauce
    • 4-5 strips of zucchini
    • crumble half of the cheese mixture
    • cover with sauce
    • 4-5 strips of zucchini
  • Gently press the top layer of zucchini with your hands to make sure that it's even
  • Top with sauce, sprinkle with more cheese if desired
  • Bake at 350°F for 35-40 minutes. You know it will be done when you can carefully press on the zucchini and the knife goes through
  • Let sit 15 minutes before cutting

​Zucchini Apple Dabble Cake

Ingredients

  • 1 ½ c sugar
  • ½ c canola oil
  • ½ c apple sauce
  • 3 eggs
  • 2 tsp vanilla
  • 3 c flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 4 c peeled, seeded, chopped zucchini

Directions

  • Mix ingredients in the order given
  • Pour into a greased 9x13 pan
  • Bake at 350°F for 30-40 minutes
Topping:
  • Combine 1 c brown sugar, ¼ c cream, ¼ lb (1 stick) butter in a pot
  • Boil for 4 minutes
  • Pour over cake when done baking
  • Return to oven for 5 minutes
